How to Make... Chicken Breast
 

Chicken Breast is one of the most popular foods in retail and food service. Yet, several challenges require attention. Adding moisture is not only good for the cost sheet, but also important for texture and mouthfeel.

 

Basically, 3 subjects are required to create the perfect Chicken Breast:

 

(1) Use a Tumbler-Marinator. A machine is needed that physically tenderizes each chicken breast, making it tender and adding yield at the same time.

(2) Purchase the right Ingredients. The right ingredients fully dissolve in (cold) water and stay within the chicken breast over the entire shelf life, not only for the next 24 hours.
